MEXICALI MEATLOAF
PREPARATION TIME: 45 minutes
1 pound lean ground beef
10 large tortilla chips, crushed
1 (12 ounce) jar chunky, garden-style salsa
1 large egg
cooking spray
PREHEAT OVEN: 375 degrees
Drain liquid from salsa in a colander. Mix together beef, crushed tortilla chips, egg and salsa in a medium size bowl. Spray cooking spray over a 13 x 9-inch baking sheet to coat. Transfer mixture to pan and pat into a loaf. Bake for 40 minutes. Serve with additional salsa or guacamole and tortilla chips on the side.
