MAPLE-GINGER GRILLED SALMON
PREPARATION TIME: 45 minutes
1 1/2 pounds of salmon fillets
1 tablespoon fresh ginger root, finely chopped
4 tablespoons tamari (soy) sauce
2 tablespoons sesame oil
2 tablespoons pure maple syrup
1 tablespoon brown sugar (light or dark)
2 tablespoons dry sherry
2 garlic cloves, minced
HEAT: Prepare a grill or build a fire that can be allowed to die down to hot coals.
Cut the fillets into serving-size portions. Combine all other ingredients into a marinade in a zip-lock bag. Add salmon and marinate 30 minutes in the refrigerator. Grill fish skin side up for 5 to 7 minutes; turn and grill 5 minutes more. Peel off charred skin and serve.
